Even if you might think it’s weird to make a cake using carrots, it actually is one of the best recipes I had. It is very affordable to make, the texture of the cake is moist and really delicious. You can decorate the Carrot Cake with powdered sugar or you can let it plain as well.It is up to you.
- 4 eggs
- 1 1/4 cup vegetable oil
- 2 cups sugar
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon grounded cinnamon
- 1 teaspoon grounded ginger
- 3 cups finely ground carrots
Mix the liquid ingredients: eggs, carrots, oil
in another bowl mix the dry ingredients : flour,sugar,baking powder, baking soda, salt, cinnamon and ginger.
Mix the two together. Then pour the batter into a 20×30 cm ceramic cake pan
Place the pan in a preheated oven at 175 C and bake it for 30, 40 min .For the last 10 minutes of the baking time you can put it on broil so you can achieve a nice golden brown color on top,
