Another great meals that is on my favorite list Green Lentils with Sausages, easy to do and so good.

  • 350 g dried green lentils
  • 2,3 tomatoes
  • 2 cloves of garlic
  • green parsley
  • olive oil
  • balsamic vinegar
  • sea salt and freshly ground black pepper

Green Lentils with Sausages

  1. Wash the lentils and drain repeatedly till the water runs clear. Then, put them into a pot, add the tomatoes too {you can use fresh tomatoes or whole can tomatoes} cover them with water, and add the garlic but don’t peel it. Leave it with the skin on.
  2. After it comes to a boil, reduce the heat and leave it to simmer for about 30 min to 1 hour. You can stir from time to time. But make sure that the heat is at low.
  3. The best sausages are the ones that are fresh, not the ready-to-eat ones. Usually ,the stores that carry fresh sausages are the ones that produce their own meat produce. They are made of pork and you can tell if they are fresh by the color. They need to be light red.
  4. Preheat the oven to 320 degrees Fahrenheit, and select the ventilation setting.
Toss the sausages in a little olive oil and put them in a roasting tray in the preheated oven for 15 minutes or until golden and crisp.
  5. Once the lentils are cooked, peel the garlic, and mash it. We’re gonna mix it with the lentils .It’s gonna give a better flavor to the lentils.
Add olive oil to the lentils, but we re gonna use double the oil that we would normally use for a salad.
Use about 6 tablespoons of good extra virgin olive oil and 4 tablespoons of good vinegar. You can add some more, depending of your preferences. Mix and season with salt and pepper.
  6. Place the lentils into serving bowls, add some finely chopped parsley leaves and place the sausages on top.
