This Grilled Vegetables Sandwich is a great breakfast because it`s really good and nutritious . It has vegetables, ham and mozzarella. Because it`s so nutritious, i promise you that you won`t get hungry to fast. You can even wrap it tight in some paper and take it with you.


  • 2 small zucchini
  • 1 small eggplant
  • 4 slices of ham
  • chopped parsley
  • mozzarella
  • olive oil
  • ciabatta bread
  • salt and fresh ground pepper


Grilled Vegetables Sandwich

  1. These quantities are for 2 servings. You have to peel the zucchini and the eggplant. Then slice them really thin. Add some olive oil in a grilling pan and add the slices too. Grill them on each side. After they are done, place them on a plate and season them.
  2. The best sandwich is made with ciabatta bread, but you can use any other bread as well.
  3. Cut the bread in 2 and add the vegetables, a few slices of mozzarella and 2 slices of ham. Sprinkle parsley and add another layer of vegetables. Close the bread and press it a little bit so that the vegetables won`t fall out. It can be served immediately, the way it is (warm) or cold later on.
