This Navajo Flat Bread with Chicken is similar with an indian bread, but not identical. Navajo is cooked in a little bit of oil on the grill or in a skillet and it`s thicker than the indian one. You can serve it along anything, with a salad, with a soup ( the way i did ), with grilled chicken and cheese. And if you don`t wanna eat meat, serve it with a good omlette.

Ingredients:
  • 1.32 pounds flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon dry seasonings ( rosemary, parsley, thyme)
  • 6 tablespoons oil
  • 150 ml warm water

Method:
  1. The ingredients are for 10 pieces.
  2. In a big bowl , mix the flour, the salt, the baking powder and the seasonings (you can use other dry spices, depending of what you like)
  3. Add the oil (you can use canola or olive oil), mix everything and make a little whole in the center so you can add the water there. Using a fork, mix slowly, taking a little bit of the flour and mix it until you get a nice dough.
  4. Then sprinkle some flour on a wood board and knee the dough on it.If the dough is to dry, add some water, if it is to soft add some flour.
  5. After 5 minutes, place the dough in a bowl and cover it with a towel. Let it sit in a warm place for 15 minutes.
  6. Then cut the dough in 10 equal pieces and knee every one of it making little balls.
  7. Add a little bit of oil on your hands and make a pancake shape out of it, 0.40 inches thick.
  8. Place a pancake pan or a thick pan on heat and cook the bread. You don`t have to add oil.
  9. Fry them on each side. The bread needs to be cooked even in the middle.
    I let them cook at low heat for more than 10 minutes.
  10. It is important that you cook them using a good pan and they won`t overcook if you will cook them at low heat.
  11. This way they`re gonna be cooked all the way.
  12. Serve them when they`re hot. You can reheat them if you like.
  13. For the grilled chicken you ll need salt and pepper to season the sliced chicken. Then add 2 tablespoons of olive oil in a skillet and fry the chicken on both sides until they become golden brown.
  14. Cut one navajo bread in half, then add the chicken , then one slice of cheese and serve it right away.
