Baked Fish Fingers with Tahini Dipping Sauce

- 600 g white fish fillet
- 1/2 lemon, juice
- salt
Batter:
- 3 eggs
- salt & pepper
- white flour for coating
- panko/breadcrumbs mixed with sweet paprika
Tahini Sauce:
- 2 tbsp tahini
- 1 garlic clove
- dill springs
- pepper & salt
- 1/3 cup lemon juice
Step 1
Slice the fish into fish finger shapes. Sprinkle with lemon and salt. Cover and set into refrigerator for 30 minutes to firm up.
Step 2
Make the sauce by mixing together tahini, 1 crushed garlic, finely chopped dill and lemon juice. Season with salt & pepper to taste.
Step 3
Place flour on a plate, panko or breadcrumbs on another and the beaten eggs with salt and pepper in a bowl. Take each fish fillet through the flour, shake well and put in the egg and the panko. Roll into your palms to give them a nice round shape, coat again in panko and place on a cooking wire rack.
Step 4
Cook for 15 to 20 minutes at 210 C, until they are golden and crisp on the outside. When ready, remove from cooking tray and serve with lemon and the tahini sauce.
