Crayfish on the Grill with Herby, Garlic Butter
The easy way to cook crayfish is on the grill brushed with aromatic butter. This recipe is so easy, fresh and full of flavor.

- 1 crayfish
- 2 tablespoons butter
- a bunch of chopped parsley
- 1 garlic clove, mashed
- 1 teaspoon chilli flakes
- salt & pepper
- lemon for serving
- olive oil
Step 1
Cut the crayfish in half. Using a big sharp knife start from the head and by pressing down hard, go all the way to the tail. Remove and discard the dark intestinal vein, stomach sac and gills. Wash with cold water and pat dry with a paper towel. Place on a plate with cut side up add salt , pepper & drizzle with some olive oil.
Step 2
Mix the butter with: parsley, garlic, chilli flakes, salt & pepper.
Step 3
Preheat the grill at high temperature, when heated place the crayfish inside with cut side down. Close the lid and cook 2 minutes. Turn on the other side and brush with the aromatic butter and leave 4 more minutes with the lid closed.
Step 4
Remove from grill, squeeze half a lemon and serve while hot.
